Why have my scones not risen?

This may be caused by:

  • Over-handling, especially whilst kneading

  • Mixture too dry or too wet

  • Scones allowed to stand in a warm kitchen too long before baking

  • Oven not pre-heated to the correct temperature

  • Oven temperature too low
