Whisking method
The whisking method is used for very light sponges and Swiss rolls.
Occasionally melted butter is added to give special flavour and texture.

Have ready a large saucepan containing 8cm (3 inch) of boiling water and a
mixing bowl which fits over the pan without touching the water.

Break the eggs into the bowl, add sugar and whisk together over the boiling
water until the mixture thickens and is lukewarm. Take great care not to
overheat the mixture.

Remove the bowl and whisk until the mixture is very thick and leaves a trail
when beaters are removed. Add the flour, or mixed flour and salt, using a
metal spoon. Lightly cut and fold into the mixture. Do this thoroughly but
lightly so the air is not expelled.
